FESTIVAL OF UNLEAVENED BREAD
WHEN?

On the fifteenth day of the first Biblical month, Abib (Aw-veev').

Leviticus 23:6 (NIV) On the fifteenth day of that month {Yahweh's} feast of Unleavened Bread begins; for seven days you must eat bread made without yeast.
7 On the first day hold a {set apart} assembly and do no regular work.
8 For seven days present an offering made to {Yahweh} by fire.  And on the seventh day hold a {set apart} assembly and do no regular work.
Why do we do this?
Exodus 12:17 (NIV) "Celebrate the Feast of Unleavened Bread, because it was on this very day that I brought your divisions out of Egypt.  Celebrate this day as a lasting ordinance for the generations to come.

How do we count the seven days?

Exodus 12:18 (NIV) In the first month you are to eat bread made without yeast, from the evening (eh'rawv; from aw-rab' - growing dark, sunset) of the fourteenth day until the evening of the twenty-first day.

Verse 18 above, should be translated to say, "...from the end of the 14th day, to the end of the 21st day."  This is why Leviticus 23:6 says that Unleavened Bread begins on the 15th day.  This is seven days of eating unleavened bread, starting with the Passover meal which is eaten at the end of the 14th day.
